Notes on the Wine
Vineyard The Lyon Vineyard team believes that in order to become successful grape growers, we must first create a healthy native ecosystem for our vineyards. Eco Terreno is the largest biodynamically farmed contiguous vineyard in Alexander Valley. The vineyard incorporates cover crops, bee gardens, husbandry and limited water usage. The old vine Sauvignon Blanc was planted in 1975 on clay loam soil. These old vines have power! Winemaking The wine is fermented entirely using native yeast. There were no additions made to the wine that alter the naturally occurring juice chemistry. Half of the pressed-juice is fermented in neutral French oak barrels, while the other half is fermented in a stainless steel tank. Malolactic Fermentation is allowed to proceed in all of the wine in barrels, after which it spent 6 months sur lie. Malolactic fermentation is not allowed to progress in stainless steel tank. The final composite blend of the two, we achieve a wine that draws the best of both worlds. Tasting Notes The complexity of fermentation shines through in the taste of the wine. The aroma evokes orange blossom, citrus, citrus blossom and mild tropical aromas. On the palate the entry is punctuated by zippy green apple and tropical fruit with a delightful medium bodied finish that is pulled through by the naturally occurring acid.
