Notes on the Producer

The Côte de Nuits label was created here in 1969 by Jean Chauvenet; the estate was handed over to his son-in-law Christophe Drag in 1994. On the Nuits-Saint-Georges border, a few meters from Vosne-Romanée, the Domaine Jean Chauvenet covers a surface of nearly 10 hectares of vines, 7 in the Nuits-Saint-Georges appellation. The entire estate is farmed using controlled natural sodding with 2 or 3 clippings between April and July. Pruning is performed for the most part using the Guyot pruning technique and Christophe chooses to de-stem his harvest 100%, and to carry out a pre-fermentation maceration of four days before a fairly long maceration, during which temperatures are controlled. He avoids racking off, because he considers the Pinot aromas too fragile to undergo this operation too often. The domaine’s wines are neither fined nor filtered.
