Notes on the Wine
Tender nose with wild herbs and field flowers (chamomile, bergamot orange). Definitely fresh and savoury on the palate, it presents a good balance between acidity and softness, with an excellent persistence.
Whole grapes crushing and soft pressing. Cold clarification just by gravity. Separation free run juice and press juice. Fermentation in stainless steel tanks and partly in oak barrels where wine remains for about 9 months. Malolactic fermentation partly done. Gentle filtration at the time of bottling.
