Notes on the Wine
The Happy Canyon of Santa Barbara AVA lies at the Eastern end of Santa Ynez Valley. The combination of rocky mineral rich soil and the large temperature swing between day and night yield wine with ripe flavors, textured tannins and fresh acidity.
Grown on rocky, mineral soil, the selected blocks were hand harvested, destemmed and left to soak for five days. Maceration on the skins lasted twenty days. The wine was aged in a combination of neutral and new French oak for eighteen months. No fining or filtration was done before bottling.

Notary Public was created with a desire to explore the diversity and potential within Santa Barbara County as a wine growing region. Santa Barbara County is blessed with various climates and soil diversity due to the unique East-West Mountain Ranges that open up to the Pacific Ocean. The focus at Notary Public is Cabernet Sauvignon and Chenin Blanc, grown in areas where they are able to craft wines with personality of both vintage and site. Their goal is to make wines that are approachable, elegant and yet structured - wines that define their area.
