Notes on the Wine
100% certified organic (since 2000) Bobal from 60 year old vines grown at 3,000 feet of elevation in and around the village of Calderon which is between the communes of Utiel and Requena that make up the DO. Harvest in late October to allow maximum ripeness for the Bobal which needs a long hang in the big diurnals of the region to obtain optimum ripeness. Two separate sortings of the bunches before a week long maceration. Fermentation in steel before 6 to 8 months in 100% new French oak. Wine is also certified Vegan.
