Notes on the Wine
Following a time-honored tradition, to kick off each year's grape harvest, Wölffer Estate Vineyard makes verjus, which literally means 'green juice,' a vibrant, slightly sweet, mildly acidic non-alcoholic juice made from grapes picked before veraison.
Prized by chefs as a substitute for vinegar or lemon, it works wonders in salad dressings and marinades, allowing a smooth integration of food and wine. Our Verjus is also used by mixologists to create fresh, inventive cocktails and mocktails. And its enjoyed by adults and kids alkie, as a refreshing and delicious beverage on its own.
Notes on the Producer
Winemaking is at the heart of all we do at Wölffer. The process begins in the vines, where Vineyard Manager Richie Pisacano meticulously manages our 55 pristine acres of estate vines. We grow Merlot, Chardonnay, Cabernet Franc, Cabernet Sauvignon, and small lots of Trebbiano, Pinot Noir and Vignole. We use sustainable farming practices and are proud to have been certified for the 6th year in a row as one of the few vineyards recognized by Long Island Sustainable Winegrowing. We carry this philosophy across each of our owned or operated properties.
